It looks like they tried to do the right thing but didn’t understand the physics of plumbing. The drain shouldn’t slope downward more than 1 pipe diameter before hitting the vent. This one does making it an illegal “S” trap. Also, a sanitary Tee shouldn’t be laid horizontally in a drain. That’s only allowed in a dry vent system.
A sanitary tee is permitted horizontally when used as a vent, but not as a drain. One issue is that the vent came AFTER the drain went down. The vent needs to be before or directly on top of the drain. If there is any offset, it would have to be after the vent went up a little and could be no more than 45degree offset until it was at least 4" above the drain OR 6" above the flood level of the fixture. Ideally, the AAV would be higher up, but they often get set lower. Another issue is the shape of the trap. The trap arm needs to be straight and then have a vent. They could have used a horizontal tailpipe with trap adapter and turned that elbow facing left, had the sanitary tee oriented vertically, had the vent directly on top of the drain and used a 1/8 bend to get it out from under the sink and had it 6" above flood level. Although, they might have had to do some different angles with a horizontal piece to make sure it was long enough to not create a crown vent. Trap arm needs to be at least 2x pipe diameter long.
You are correct! That “S” trap will allow a siphon to occur and suck the water out of the trap. That will allow sewer gas into the restroom. The sad thing is that this is in a restaurant. You would think some official person would catch this. The owner of this establishment must do his/her own plumbing.
It would be incredibly easy to fix correctly.
Additionally, suction from the syphon could rupture the diaphragm in the AAV.

I've offered to paint at the house my friend is trying to buy. He found another one that was in better shape and more land and owner isn't a dick. After he paid for the inspection/appraisal at the other house the seller reneged. Can't remember if I mentioned that. But he found one just outside town that doesn't have city tax. Has almost 2 acres, a barn, a workshop, a storage shed, 2 car carport, 4 bed 3 bath. Roof replaced in 2018. Septic tank sucked in August. It has a mechanical effluent system and motor was recently replaced on the pump. Its closer to his work. Seller is willing to work with him on stuff.
AC people came out today on time. I was in the front room spraying febreeze when the guy knocked. Took a couple hours but they got it all in and it's cooling. Down to 75. It's 78 outside. When they first cranked the AC back on it was 88 inside. The cats seem much more comfortable. I know I'm more comfortable.
Still need to install the 2nd grille and cover up the hole in bro's room when we take old grille out.
Resting for a bit though.
